It would be cool to have an additional time slot status that acts like open, but instead says "High Need" or something like that. To draw more attention to a particular time slot or event.

Hi Garrett,
We do not have this specific functionality on a slot-by-slot basis, but you can certainly use the "Pin to the Top of the Opportunity Listing" functionality within the opportunity to display it as a highlighted opportunity on your opportunity listing page.
You can also use the new "Stickers" functionality (https://www.youtube.com/watch?v=hzisJSjmnQw) in conjunction with the setting mentioned above to annotate certain opportunities as "Urgent" or "High Need".
Again, this is done at the opportunity level and not on a slot-by-slot basis, so it may not be exactly what you are looking for, but it should allow you to accomplish what you are trying to accomplish.
